Birdie is a very active, reliable sourdough starter who loves a regular schedule, clean ingredients, and the occasional bake day celebration. Treat her right, and she’ll raise your loaves to new heights!
Birdie’s Feeding Instructions
Feed Schedule (Active Use): Feed once daily, around the same time each day.
What Birdie Likes:
- 60 grams unbleached, unenriched all-purpose flour or bread flour
(We use organic, non-GMO flour for best results). - 60 grams filtered, non-chlorinated water (room temperature is best).
- Stir well and loosely cover.
Using Birdie in Recipes
After two consecutive days of feeding, Birdie is strong and ready to be used for:
- Bread loaves
- Pizza crust
- Pancakes
- Crackers
- Anything your flour-loving heart desires
Look for:
- A doubled rise within 4–6 hours of feeding
- Bubbles and a mild, tangy smell
- Float test (optional): a spoonful of starter should float in water when it’s ready!
Maintenance Options
If You Bake Often (3+ Times per Week)
- Keep Birdie at room temperature
- Feed her once daily
- Discard half before feeding unless you’re growing her for a big bake
If You Bake Occasionally (Once a Week or Less)
- Store Birdie in the fridge
- Feed once a week:
- Remove from fridge
- Discard half
- Feed 60g flour + 60g water
- Let sit out for 4–6 hours before returning to the fridge
Pro Tip: Always feed Birdie after using her in a recipe—she’s a working girl and needs fuel!
Reviving Birdie (After a Break or Neglect)
As much as we don’t want this to happen, life happens.
- Pull her from the fridge
- Let sit at room temp
- Resume daily feeding for 2–3 days
She’ll bounce back with that signature bubbly energy!
